I can’t believe it’s been five months since @nextchicago, they’ve already moved on to two new themes (right now they’re doing @alinea classics from 2005-2010 - hope you enjoy it @tombert05!) and I’m still posting from the dinner there (I did say it was going to take me awhile). This is the 7th course: Rôti de Chevreuil au Foie Gras > escarole, winter spices, lentil. Perfectly done piece of venison with a foie gras middle melting ever so slowly. I was pretty full and about three sheets to the wind by this course but I still remember every bite. Let’s just say, it fulfilled every fantasy that I’ve ever had about a mid rare piece of meat. Pulling Mozzarella: We keep our curd in a salted water bath at 180 F before we begin pulling. Kneading and stretching the curds help to elongate the protein chain, causing the stringiness and elasticity in the mozzarella.
